Veggie and Protein Packed Turkey Chili


2 lbs. extra lean ground turkey (99%/1%) 4 Tbsp. chili powder

1 8oz container of fresh sliced mushrooms 2 Tbsp. ground cumin

5oz fresh matchstick carrots 2 tsp. ground coriander

1 12oz bag frozen riced broccoli 1 tsp. black pepper

1 28oz can crushed tomatoes 1 tsp. salt

1 28oz can tomato sauce 2 tsp. red pepper flakes

2 tsp onion powder 8oz water

In a large stock pot, spray bottom of pot and cook ground turkey over medium heat.  Add vegetables and seasonings.  Stir all together and cook for about 10 minutes.  Add crushed tomatoes and tomato sauce. Cover and simmer on low for about 20-30 minutes.  Garnish with shredded cheese, fresh avocado slices and/or plain Greek yogurt.  Enjoy!
