Quinoa Veggie Bowl

Why do I love Quinoa?  Quinoa is 100% whole grain and VERY good for you! It is the most complete protein of any grain. It is also gluten-free for those of you that have an intolerance to gluten. Quinoa is also a great source of B vitamins. 

Try my very easy recipe:

1/2c uncooked quiona, 2 zucchini, 1 container cherry tomatoes, 1 8oz jar hearts of palm, 1/4c reduced-fat crumbled feta, 1 lemon juiced, 2 tsp balsamic vinegar 1tsp onion powder, 1 tsp vegetable or poultry seasoning.
Cook quinoa as directed. Cube all vegetables. Saute zucchini and tomatoes in Pam for about 5 minutes. Combine all ingredients and refrigerate. This dish is great on top of fresh spinach and can be eaten cold or hot. Enjoy!
